An evening around one table

Time in the glass. Stories at the table.

Dante CerioliAIS Professional Sommelier

We will meet in a private dining room at Osteria de l'Umbreleèr, reserved exclusively for the evening: ten guests and me, sharing wine, stories and discoveries around one table.

We will begin with a short presentation using images, audio and video to introduce Villa Cafaggio and Tenuta di Nozzole, their history and the places where the wines originate.

The tasting will unfold in two stages: first the three Cortaccio vintages alongside the starters, then the four Il Pareto vintages with the pasta and main course. We will explore the differences between vintages and follow the wines as they develop in the glass.

I will join you at dinner to guide the tasting personally, discuss the individual bottles and answer your questions. There will be time and space to share what we discover together.

Ten guests, seven vintages and the pleasure of discovering them together.

Beyond the programme

The estates behind the labels.

What the vintages tell us.

The archival notes describe the wine at the time. We will explore how the evening’s bottles have evolved together in the glass.

At Greve in Chianti, Nozzole has belonged to the Folonari family since 1971. Il Pareto brings Cabernet Sauvignon alongside the estate’s Sangiovese tradition.

  1. Il Pareto · 1998

    Il Pareto

    1998

    Producer’s historical notes

The historical notes describe small red fruits and integrated oak: a full, velvety profile, soft tannins and a lingering finish.

    Tenute Folonari · 1998

  2. Il Pareto · 1997

    Il Pareto

    1997

    Producer’s historical notes

Spring frost and strong summer sunshine marked the vintage. The notes recall ripe and compote fruit, full body and fine, concentrated tannins.

    Tenute Folonari · 1997

  3. Il Pareto · 1996

    Il Pareto

    1996

    Producer’s historical notes

Following September rain, the producer emphasised elegant tannins: harmonised fruit and oak, with a dense, rounded tannic texture.

    Tenute Folonari · 1996

  4. Il Pareto · 1993

    Il Pareto

    1993

    Producer’s historical notes

A cool, relatively dry summer encouraged tannin concentration in Cabernet. The historical notes emphasise the balance between tannin and acidity.
